NEW CUMBERLAND, Pa. - Feeding lunch to 450 mouths can be a daunting task, but for Spc. Keith Timlet, this is a no big deal and says cooking is his hobby.

Timlet is a food supply specialist with the 824th Quartermaster Company and a native of Fayetteville N.C. His skills are being used to assist the civilian cooks, preparing food for the employees here at the Defense Logistics Agency Distribution Susquehanna.

Nineteen soldiers from 824th QM of Fort Bragg, N.C., are here at the DLA depot conducting their annual training.

He is the only cook from his unit working with the Defense Dining Service staff at the In Flight Cafe.

“Just like the rest of us, Spc. Timlet is here for annual training. He lucked out because they had a position at the cafe for him,” said Staff Sgt. Lorraine Naranjo, of Fayetteville, N.C. “He is doing very well according to the DDS staff; he is abiding by everything that they request of him.”

Timlet is a veteran of both the Navy and the Army. He has served in the Navy, Army National Guard and now the Army Reserve, always as a cook. He graduated from Fayetteville Technical Community College with a degree in Food Service Management.

“He was able to fit right in because of his kitchen experience,” says David C. Feltch III, manager of the In Flight Cafe. “He is a great soldier. I would love to keep him employed here.”
For Timlet, cooking is a passion.

“Cooking is an art. The food has to look good and taste good too, but besides that, it has to be safe. All food safety standards must be adhered to.”

He starts his day at 6 a.m. helping with breakfast and getting lunch ready after which he does physical fitness training with his unit.

“We don’t get to sit down,” says Timlet. “I get a break at 8 a.m. for breakfast and another at 10 a.m.”

Working with civilians allows him to see the fast pace operation of a cafe.

“I learn about customer service by talking with the customers,” says Timlet. “I would definitely come back here if I could.”
“When I get up in the morning I look forward to doing my job. Cooking is my hobby and I love doing it for my buddies and these DLA employees.”
