Marine Corps Air Station New River held a cake decorating competition aboard Camp Geiger, Nov. 6. The competition was open to all service members and DOD civilians on station.
The competition was open to people of all levels of experience. Sodexo staff assisted in teaching classes on how to build cakes and how to decorate them.
“They have the class and then they do what I taught them,” said Dennis Shepherd, instructor for the competition. “It doesn’t look good until you have the decorations on them. It takes three days to make one cake. You have to bake the cake one day, let it set, make it white, come back the next day, smooth it out and decorate it.”
The cakes were made in the classes for the Marine Corps Birthday and will be served at mess halls across Marine Corps Installations-East. Participants made cakes for several days prior to the competition and were judged by Col. Scott Baldwin, the commanding officer of the G4 for MCIEAST.
First, second and third place each won baking supplies to take home with them. Terrance Stacey won first place, with Lance Cpl. Tesha Tooke, food service specialist with Headquarters and Headquarters Squadron in second and Pfc. Giovani Deleonacosta, food service specialist with Headquarters Battalion, 2nd Marine Division, in third place.
“It sounds a lot easier than it looks. There’s a lot of tedious work that goes into it,” said Cpl. Chantz Burlton, competition participant. “Although my cake is simple, it allows me to focus more on the details.”
The competitors were allowed to make the cakes as creatively as they wanted as long as they followed the competition’s regulations.
“Stacking cakes can be nerve racking by itself because you’ve got to stack it just right,” said Shepherd. “There’s no exception to this rule, so they all messed it up of course. I can fix it so I taught them.”
The students were encouraged to learn and perfect their cake-decorating techniques.
“It’s tricky, (the participants) get mad because they’ll see me just fly through it,” said Shepherd. “They think they can do it. I’ve had 30 plus years doing this. The first year my cakes were ugly, but now I’ve come a long way.”
