Marines and Sodexo food service specialists competed in the “Chef of the Quarter” competition at Mess Hall 280 on Marine Corps Air Station Beaufort, S.C., May 2, 2019.
The competition began with four teams representing Marine Corps Recruit Depot Parris Island, MCAS Beaufort and the food services management company Sodexo. After receiving a brief regarding the ingredients they were allowed to utilize for the competition, the teams competed in a race against time to prepare the best lunch possible.
During the competition, the teams had four hours to create a dish that stuck with the Caribbean theme and present them to a panel of judges for scoring.
“It’s a great opportunity to practice my craft on a small scale” said Sgt. Stephen J. Van Hout, a Quality Assurance Evaluator at mess halls aboard the depot. “I loved competing. We don’t get those opportunities often. My favorite part was the chance to mentor the other teams that were competing for the first time.”
The teams competed for first place in the competition as well as People’s Choice. The Parris Island Mess Hall swept the event by taking home both awards.
