    Since stepping foot into Marine Corps Base Hawaii’s Anderson Hall, Master Gunnery Sergeant Morris Mayfield could tell it hadn’t lost its potential, envisioning an experience that would rejuvenate every Marine who passed through its doors. The aging dining facility had seen better days, but he was determined to restore it to its former glory. As the new food tech on MCBH, Mayfield had taken command of a facility that had lost its spark. Drawing on his 28 years of versatile experience in food service from the kitchens of Japan to the dining halls of Paris, Mayfield is seeking to modernize Anderson Hall, blending his old-school mentality with a fresh, innovative approach.

    First on his agenda is revamping the menu; gone are the days of limited options and uninspired dishes. Mayfield believes Anderson Hall should cater to the variable needs and preferences of Marines by offering a smoothie bar, a fitness focused menu, and new, healthy, yet flavorful dishes. “You got options now, but you still might turn around and say, ‘I know you got that smoothie bar over there, but I'm gonna go get this ice cream,” said Mayfield. “That's a personal choice, but it's all about giving the Marine options out there. You are a professional warfighter and you deserve to have a sense of professionalism and comfort so you can go back out and engage the enemy.”
    Mayfield has already begun to implement these innovative ideas, such as a grab-and-go option for healthier snacks, with the intention of allowing a Marine to be able to save a little extra money.
    He seeks to educate the Marines on the importance of proper nutrition, empowering them to fuel their bodies and minds for the rigors of their duties.

    Second on his agenda, he wants to transform the very atmosphere of Anderson Hall, making it a place of respite and rejuvenation for the Marines, because modernization goes beyond the food. From the moment a Marine walks in, their experience should begin with a new and fresher look to the interior with updated pictures on the walls, and comfortable, updated furniture to the customer service.
    "I want you to sit down, and I want you to unwind yourself just for a minute.” Mayfield said. “Enjoy your meal and know that you're getting proper nutrition while you're in here."
    Chow halls stand as a staple part of every Marine Corps installation and their impact on service members cannot be overstated. Overall, Anderson Hall is steadily improving every day under the command of Mayfield. The new improvements have proven to be successful through the feedback of Marines, the full bellies, and positive attitudes of all who leave.
