Chef Robert Irvine shows food service Marines with 4th Marine Regiment how to pre-cook vegetables Jan. 7 on Camp Schwab using a technique called blanching. Blanching is boiling vegetables and then plunging them into ice water before using them in a recipe. Blanching is used to whiten vegetables or partly or fully cook them.
