Keith Wijeratna (pictured left), a Sri Lanka native and South DFAC location manager, Gulf Catering Company, works with one of his subcontractors to properly spice a dinner dish, March 27, at the Contingency Operating Base Speicher South Dining Facility, the largest dining facility at COB Speicher, near Tikrit, Iraq. Wijeratna supervises the contracting staff engaged in preparing and serving food in accordance with applicable health and safety standards, and is responsible for aspects of DFAC administration, cost management, safety management and staff training programs.
