Marines and civilians from surrounding Marine Corps Installations competed in the 2nd Quarterly Culinary Team Competition at the Wallace Creek Mess Hall on Marine Corps Base Camp Lejeune, April 9, 2019. The competition started with 11 teams comprised of one team from every unit on MCIEAST. There are three parts of the culinary competition. First, the teams attend a training workshop where they are provided skills and tips on improving their techniques in the kitchen. Second, the teams will be given a written 50 question test on basic culinary knowledge and a practical test that will afford them the opportunity to verbally present their visions for the competition. Lastly, the 4 final teams will compete in the execution part of the competition. The teams have 4 hours to create a dish that coincides with their chosen themes and the dishes are presented to a panel of judges for scoring. “I feel like the significance of this competition is networking.” said Staff Sgt. Lashawn Graham, food service specialist, Headquarters and Support Battalion, MCIEAST-MCB Camp Lejeune, “you get Marines and civilians from different areas who work on different levels all meeting and learning from each other. Without these competitions there is only a slim chance that we would ever be able to come together like this.” He said. Graham is accompanied by Staff Sgt. Yareli Allen, food service specialist, Headquarters and Support Battalion, MCIEAST-MCB Camp Lejeune, and is giving the famous New Orleans Mardi Gras theme a twist by creating a more high-end atmosphere. His team presented traditional New Orleans dishes comprised of lobster and chicken Po’ Boy sandwiches, Cajun-Style blooming onions, a Cajun-Style rice soup, and a fresh cup of Hurricane Punch. Graham and Allen’s team received third place in the competition.
