Meet Cpl. Heather Mathews, a culinary specialist assigned to the 38th Infantry Division from Knightstown, Indiana. She is responsible for ensuring food safety in the Zone 6 Dining Facility at Camp Arifjan, Kuwait, and this year’s Thanksgiving meal is a tall order. This year, U.S. Army Central is expecting to serve over 6,000 turkeys, 12,000 pounds of ham, 21,000 pounds of shrimp, 14,400 pies, 7,200 gallons of eggnog and 14,000 containers of whipped cream across the U.S. Army Central area of operations. Not only is the Thanksgiving meal a morale booster for the troops, Mathews said, it’s a helpful way to connect them to their families back home. “About as much normalcy as we can muster,” she said.
