Heather Mathews, a culinary specialist assigned to the 38th Infantry Division from Knightstown, Indiana, is responsible for ensuring food safety in the Zone 6 Dining Facility at Camp Arifjan, Kuwait, one of about 60 dining facilities in the U.S. Army Central area of operations serving Thanksgiving meals this year. One the menu for the Zone 6 Dining Facility at Camp Arifjan this year: roasted turkey, shrimp cocktail, green beans and ribeye roasts.
