Did you know that sushi means ‘seasoned rice’ and not ‘raw fish’, as many people who delight or shy away from the dish altogether, believe?
As a guest for the VA Nebraska-Western Iowa Health Care System’s Employee Wellness Committee Healthy Event Day, Sean McCartney, a sushi chef from one of the Nebraska Hy-Vee markets, was on hand to demonstrate the making of sushi and ultimately provide samples to the employees. At his table, he revealed just how tasty and easy the seasoned rice goes well with avocadoes, cream cheese, cucumbers and even the dash of seafood.
Julia Berry and other members of the Employee Wellness Committee were on hand to share with NWIHCS staff samplings of the various ways that employees can prepare healthy dishes in short time, versus always heading for the fast food takeout’s.
“These dishes are easy to make, with many of them being plant based,” Berry said.
Many times, because of the overwhelming desire to treat Veterans who come to the NWIHCS, employees don’t take the time to get healthy meals for themselves. This event was just a way to showcase nourishing and easy ways to prepare meals or snacks that keeps them going with low cost, quick alternatives to the high fat and cholesterol packed meals they may get elsewhere. Many of the meals could be made in advance and saved for later consumption.
“A lot of employees use fast food as a convenience and the Employee Wellness Committee is all about keeping our employees knowledgeable about good health practices. Plus, these dishes are easy to make,” Berry said.
Medical service assistants Kimberly Bryant and Jamila Davis from the Omaha VAMC Yellow Clinic were among staff members who came out for the mid-day tasting.
“I think the samples taste wonderful,” Bryant said. Even though I don’t cook a lot, I would definitely try some of these dishes. They have done something with the spices that make them really tasty.”
Davis echoed the same sentiments. “I like the fruit based samples, especially the yogurt fruit tart.”
Tasty and healthy samples for the employees to enjoy included not only sushi, but also beef stir fry, peanut butter-chocolate energy bits, roasted chickpeas, Greek yogurt fruit tart, quinoa broccoli salad with honey mustard dressing and a spicy watermelon salad.
