CAMP HANSEN, OKINAWA, Japan— Judges question a competitor during a Food Service Specialist of the Quarter Competition Oct. 31 aboard Camp Hansen, Okinawa, Japan. During the competition, competitors are judged on: serving methods and presentation, portion size, nutritional balance, menu and ingredient compatibility, creativity and flavor, texture and doneness. They were given six required ingredients: lobster tail, whole chicken, frozen mustard greens, Japanese sweet potatoes, pumpkin and grapefruit. They had to incorporate all six ingredients into their dishes presented to the judges.
