Staff Sgt. Carlos Mercado, advanced culinary NCO, prepares empanadas as the appetizer in his four-course meal during the Armed Forces Chef of the Year category in the Joint Culinary Training Exercise March 8, at the Joint Culinary Center of Excellence on Fort Lee, Virginia. The 44th annual JCTE, administered by the Joint Culinary Center of Excellence, started March 9, and continued until March 14. The exercise is the largest American Culinary Federation-sanctioned competition in North America and showcases the talent of more than 200 military chefs from around the world.
