Carlos Mercado, advanced culinary NCO, prepares empanadas as the appetizer of a four-course meal during the Armed Forces Chef of the Year category in the Joint Culinary Training Exercise March 8, at the at the Joint Culinary Center of Excellence on Fort Lee, Virginia. The Isabela, Puerto Rico native serves in 426th Brigade Support Battalion, 1st Brigade Combat Team, 101st Airborne Division (Air Assault). The 44th annual JCTE showcases the talent of more than 200 military chefs from around the world as the largest American Culinary Federation-sanctioned competition in North America.
