“I’m from Lagos Nigeria, born and raised. Nigerians are very family-oriented, so I definitely miss my extended family. My uncles, my aunts, my cousins – most of the time we all lived together. I learned a lot from them, but most especially I learned how make all of our different delicious African delicacies. It gave me a sense of value in my people and my culture. I was really astonished at how you could mix all these vegetables and herbs and ingredients together to make something really delicious. My favorite would be pounded yam and Egusi soup, which is native melon with palm oil, stock fish, and dried fish.
Cooking is something I definitely plan to invest in. I want to open a restaurant in the future, and the goal is to make African meals. The first potluck I experienced while I was in the Air Force, I decided to bring one of my native delicacies. They literally cleared my whole pan, and it made me feel even more welcome in the Air Force. Seeing people eat it up and really love it, it boosted my confidence in the fact that I learned well and properly, and I owe it to my family back in Nigeria for taking the time to teach me.”
